Concentrated and fresh musts

SPALLANZANI VINI SRL SPALLANZANI VINI, thanks to the numerous focused investments in cutting-edge technologies, can now offer and customize different varieties of musts, both conventional and organic, according to the clients’ needs. All the productions start with selected and controlled raw materials

Fresh Must

The fresh must is obtained pressing healthy and ripe grapes and it is conserved at O°C.

This grape juice is mainly used in the wine industry and in the fruit juice field.

This product is also available ORGANIC UE 834/07-889/08 and NOP USDA 100% ORGANIC

Concentrated Must

The concentrated must, also available white and red, is obtained through the under-vacuum evaporation of the water contained in the must (grape juice).

It is mainly used in the wine industry for enrichment and refermentation processes, and nowadays it is also a suitable product for the food industry, generally used to prepare fruit-flavored products with  low content of sulfites.

Upon client’s request, variations for what concerns color, sugar content and total acidity  are also possible.

This product is also available ORGANIC UE 834/07-889/08 and NOP USDA 100% ORGANIC.

Concentrated Must rossissimo

The concentrated must Rossissimo is a high-quality product, obtained by the Ancellotta grapes (a native vine of the Modena and Reggio Emilia area).

Generally used in the wine and food industry, it is characterized by its high coloring strength, always adaptable to the client’s needs.

Cooked Must

The cooked Must originates from a particular grape must cooking, and, together with the wine vinegar, it is the main ingredient of Balsamic Vinegar of Modena IGP.

The typical slow cooking emits the usual plum and liquorices perfumes.

Available up to a density of 41 bè / 74 brix with  low content of sulfites

This product is also available ORGANIC UE 834/07-889/08 and NOP USDA 100% ORGANIC.

RCM - Rectified Concentrated Must

The rectified cooked must (RCM) is a completely neutral colorless and odorless product, with a concentration of 65 or 70 brix.

The RCM is grape liquid sugar, obtained from the must, once it has been deprived of the non-sugar components, and it is made of 50% fructose and 50% glucose. This product is suitable for the wine sector and the food industry (marmalade, fruit juice, ice cream) and for completely fruit-based products.

Spallanzani Vini also works for third parties.

White, Red, sparkling and still wines in Emilia Romagna

Our wines, only produced at a controlled temperature and with selected musts, can be customized to suit every clients’ need. The production, besides the fermentation, also includes fining, stabilization and filtering.

Red and White Wines

We produce and market white, rosé and red wines from all over Italy, varietal and PGI wines

Rossissimo wines

The wine “rossissimo” is a high-quality product, obtained by the Ancellotta grapes (a native vine of the Modena and Reggio Emilia area)

Sparkling, semi-sparkling, Lambrusco Wine

Spallanzani Vini can satisfy the request of sparkling and semi-sparkling wines, also working for third parties thanks to the great number of autoclaves. We also cater for various services in order to provide you with a final product, ready to be bottled, such as:  proteic and tartaric stabilization and tangential filtration.

We are also producer of sparkling Lambrusco Wine IGT both white, rosé and red.
